Coming off Vikram Vij’s Indian review, I had a chance to sit down and take in Chuck Hughes’ (of Chuck’s Day and Week Off on Food Network) show at the Eat Vancouver Festival. To say that they are very different would be an understatement. Where Vikram had colorful and handmade curries, Chuck brought refined french cooking. Where Vikram brought a down to earth style of presentation, Chuck was rough, abrupt, and sarcastic. However, these added to his charm as he kept people fascinated by his descriptions of french cuisine. His scallops were a huge hit but what had people talking was his upside down cherry tort. Would I recommend Vikram over Chuck? Not at all. Both are amazing chefs but with completely different styles and backgrounds.

Who is the best chef in Vancouver? I would like to propose that Vikram Vij of Vij’s, Rangoli, and his latest venture, a food truck called Railway Express, be included in that discussion. This past weekend at Eat Vancouver Festival, he firmly cemented his place among elite chefs as he wowed festival goers with his vast knowledge of Indian cooking and his ability to make everyone laugh. I got a chance to try one of his Indian curries (which he made right there) and it was delicious. He demonstrated some Indian dancing and kept everyone glued to their seats with his descriptions of the various spices from India. Trust me, he is an amazing person.
